This creamy, zesty, super flavorful kale and garlic raita is the perfect side dish to your favor Tikka Masala dish or even as a appetizer dip with mini naan!

With a bunch of leftover quickly wilting kale in the fridge, I was running out of variations of kale salads to make. Remembering one of our family favorites: Trader Joe’s Spinach and Kale Greek Yogurt dip. I quickly starting making a Indian spiced variation of the dip.
Ingredients for Kale & Garlic Raita
- Kale - Winterbor or curly kale is my favorite to use. Its usually always available at most grocery stores
- Garlic - Fresh minced garlic
- Green chili peppers - green thai bird chili peppers or serrano peppers
- Yogurt - any variety of plain yogurt
- Lemon - fresh squeeze of lemon juice
- Chaat Masala - I use this brand. Chaat masala is a tangy, spicy blend of Indian spices.
- Cilantro - freshly chopped cilantro
- Cumin Seeds - whole cumin seeds
- Mustard Seeds - whole black mustard seeds
How to make Kale & Garlic Raita
- Gather all the ingredients, finely chop the kale, mince the garlic and chili peppers.
- Heat oil in a medium pan. Add cumin and mustard seeds to the pan once the oil is warmed.
- Once the seeds start sputtering, add the minced garlic and chili peppers.
- Add in the chopped kale before the garlic and chilis get too dark. Saute the kale for a few minutes until soft and wilted. Remove from heat and set aside.
- In a mixing bowl, combine yogurt, lemon juice and chaat masala. Add the cooled kale and garlic mixture to the yogurt and mix to combine. The raita can be served immediately or stored in the refrigerator for a few days.
How to add Kale to Indian food?
Kale is also an easy swap into Indian recipes. You can treat it similar to spinach and mix it into dals and curry. Swapping in kale for spinach will give you a nice change up of flavors and textures for your dishes.
Kale is really high in nutritional value, one of the most nutrient packed foods you can find. An excellent source of vitamins C, A, and K, plus its low in calorie and carbs, high in fiber. It also contains protein.
