Kale and Garlic Raita

Kale sautéed in garlic and spices mixed into a flavorful yogurt sauce

  • 2 teaspoons olive oil
  • ¼ teaspoon mustard seeds
  • ¼ teaspoon cumin seeds
  • 1 clove garlic minced
  • 1-2 small green chili peppers minced
  • 1 cup kale finely chopped
  • 2 cups yogurt
  • 1 juice of lemon
  • ¼ cup cilantro minced
  • salt and pepper to taste


  • Heat olive oil in a small frying pan. Once oil is warmed, add mustard and cumin seeds.
  • Once seeds are sizzling in oil, add minced garlic and green chilis, mix and saute for a few seconds.
  • Add minced kale to the oil, cook for a few minutes until kale wilts. Remove seasoned kale from pan, set aside to cool.
  • Combine yogurt and seasoned kale mixture (once cooled) in small bowl.
  • Season with lemon juice, minced cilantro, salt and pepper. Serve cool. If not serving immediately, keep refrigerated until serving.
