Kale and Garlic Raita
Kale sautéed in garlic and spices mixed into a flavorful yogurt sauce
- 2 teaspoons olive oil
- ¼ teaspoon mustard seeds
- ¼ teaspoon cumin seeds
- 1 clove garlic minced
- 1-2 small green chili peppers minced
- 1 cup kale finely chopped
- 2 cups yogurt
- 1 juice of lemon
- ¼ cup cilantro minced
- salt and pepper to taste
Heat olive oil in a small frying pan. Once oil is warmed, add mustard and cumin seeds.
Once seeds are sizzling in oil, add minced garlic and green chilis, mix and saute for a few seconds.
Add minced kale to the oil, cook for a few minutes until kale wilts. Remove seasoned kale from pan, set aside to cool.
Combine yogurt and seasoned kale mixture (once cooled) in small bowl.
Season with lemon juice, minced cilantro, salt and pepper. Serve cool. If not serving immediately, keep refrigerated until serving.
