
Is there a better way to brunch than huevos rancheros? In my opinion, no!...well except maybe when its kicked up a notch or two with some chipotle peppers and jalapeños! Just like you need to season every layer when breading and frying, I believe that you have to season every layer in this spicy chipotle huevos rancheros dish!

Let's run through all of the components, all of the layers of flavor in this eggs-cellent dish!
Huevos (eggs)
Typically poached or fried. But when you're making this at home, you can make them however you choose! I love a runny fried egg for this. Simply finished with a sprinkle of coarse sea salt!

Tortillas
Your preference, corn or flour. I prefer corn usually, I just love the flavor and texture with the huevos. But I have to get a quick char on my mine by heating over the flames on the gas stove. You can also fry them in oil really quickly or heat them in the microwave to soften.
Beans
I love refried beans for this, they have the best texture because they're kinda mashed you can spread on the tortillas as a base. But regular black beans or pinto beans are also great with this dish. and you really don't need to season them, but I love to give refried beans an additional flavor kick, adding jalapeños and onions, are such simple ingredients that provide such a flavor boost.

Salsa
Warm chipotle salsa (see recipe below), made with canned tomatoes, chipotle peppers in adobo sauce, garlic and cilantro. All blended together and cooked with toasted cumin seeds and sautéed onions. Now this is super quick to make, but I have to admit when it comes to putting this dish together in a pinch, a store bought salsa will definitely work. Just try to warm it so it does not make the entire huevos rancheros dish cold.
Toppings
Take your pick! You don't have to top with anything at all with the flavors already in the beans and salsa. Or you can be like me and top with everything! Think: sour cream, cheese, cilantro, hot sauce, avocado. Yea the toppings always make the dish for me! What are your favorites??

Spicy Chipotle Huevos Rancheros
Ingredients
Spicy Chipotle Salsa
- 14.5 oz canned tomato
- ½ onion diced
- 3 garlic cloves
- 3 chipotle peppers in adobo sauce
- ¼ cup cilantro
- ½ teaspoon salt
- ½ teaspoon cumin seeds
- 1 teaspoon olive oil
Jalapeno Refried Beans
- 1 teaspoon olive oil
- 1 jalapeño pepper diced
- ½ onion diced
- 16oz canned refried beans
Spicy Chipotle Huevos Rancheros
- 2 teaspoons olive oil
- 4 eggs
- 8 corn tortillas
- 2 oz shredded Mexican blend cheese optional
- ¼ cup chopped cilantro optional
- ¼ cup sour cream optional
- 1 avocado sliced
Instructions
Spicy Chipotle Salsa
- Add all of the chipotle sauce ingredients (except the olive oil and cumin seeds and onions) into a blender. Blend until smooth or pulse until you reach your desired consistency.
- Add oil to the a saucepan, heat on a medium. Once the oil is warm, add cumin seeds and allow to toast for 1 minute. Add the diced onions and cook for about 2 minutes, until softened. Add the sauce ingredients from the blender. Stir to combine. Cook for about 7-10 minutes until heated through. Remove from heat and set aside.
Jalapeno Refried Beans
- Heat oil in a saucepan on medium. Add diced onions and jalapenos, cook for 2 minute to soften. Add refried beans and stir to combine. Reduce heat to low, cover and cook for 5 minutes. Stir beans and remove from heat.
Assemble Spicy Chipotle Huevos Rancheros
- Add 2 teaspoons olive oil in a frying pan, heat to medium. Carefully crack eggs into pan. (Cover the frying pan to cook/steam the egg without flipping) Cook for about 3 minutes or your desired doneness. Set aside.
- Heat tortillas by either charring them quickly on a stove or warming for about 30 seconds in the microwave.
- Divide jalapeño refried bean mixture onto each tortilla, top with shredded cheese, eggs, spicy chipotle salsa, avocado, sour cream and chopped cilantro.
