    Schezwan Fried Rice

    How can you say no to a spicy fried rice? I know I can never resist!! I love playing around with different variations of fried rice dishes because there are endless possibilities! This one is spicy and easy to make because I just use a pre-made Schezwan sauce. In less than 20 minutes, you can be wolfing down a bowl of this Schezwan fried rice with mushrooms and carrots, or any other combination of veggies you prefer. 

    The key to perfect fried rice is starting with day old rice. You want to make sure the rice is dried out enough to season and fry. Otherwise you will end with a mushy rice dish. 

    Other than the rice, the list of ingredients in this is quite simple: veggies. Yup, just whatever veggies you have on hand that you want to add. I added mushrooms, carrots, plus onions, garlic and of course a few hearty spoonfuls of the Schezwan sauce.

    I like the Ching's Schezwan Sauce, I think it has a nice balance of heat and flavor. It's become a pantry staple for us! It works great for rice, noodles, and stir fry.

    The process for perfect Schezwan fried rice

    For the schezwan fried rice with mushrooms, the rice is actually the last ingredient that goes in. You want to make sure that all of the veggies are ready first. So stir fry your veggies in a little bit of oil, I like to use  sesame oil because I think it adds such flavor to a simple dish like this. Once the oil is heated, add your veggies and stir. They should be cooked through within a few minutes. Add the schezwan sauce and stir to coat your veggies. Last step is to just add the day old rice you have set aside. Stir to coat and heat the rice through.

    Ingredients
      

    • 1 tablespoon sesame oil
    • 2 cups rice
    • ½ cup sliced mushrooms
    • ½ cup sliced carrots
    • ¼ cup sliced onions
    • 1 garlic clove minced
    • 1-2 tablespoons Schezwan sauce

    Instructions
     

    • Heat sesame oil in wok on medium heat. Once oil is heated, add all vegetables.
    • Cook vegetables for 5-7 minutes, until cooked through. Add Schezwan sauce, stir to coat all vegetables.
    • Add rice, stir to combine. Remove from heat once rice has heated through, about 1 - 2 minutes. Enjoy!
