
This cilantro and scallion egg salad is a quick and super simple but flavorful lunch! Egg salad is such a typical lunch time staple, most people overlook it because its boring or too heavy. I tend to agree with that but sometimes you just want that creamy texture of egg salad. Plus eggs are a great source of protein! So here's a new take on a classic work week lunch.
I reduced the mayonnaise and cut out some of the other flavors from your typical egg salad. I wanted to keep it super simple after all. I added some herbaceous flavor from scallion and cilantro! It's actually just the simplest dressing of mayo, mustard, scallion and cilantro. So you can have this scallion and cilantro egg salad prepped in no time at all, which is another perk to make it an easy work week lunch!

I like to kick up the flavor even more by sprinkling everything bagel seasoning over the egg salad. Suddenly you get the sense that you're eating brunch in a cafe in the middle of the week!
I like to serve this on a lightly toasted croissant, so you really get the feeling that you are eating brunch! Maybe it would make more sense to have this on a bagel (especially given that I added a heavy dose of everything bagel seasoning!) but I think with a bagel you're just more likely to make a mess of the whole thing with the filling squeezing out as you eat. So I like the neater (and buttery!) option of the croissant. But you can choose any vehicle to serve this on. Actually it doesn't even need a carb! (just kidding, I love carbs)

Scallion and Cilantro Egg Salad
Ingredients
- 2 boiled eggs chopped
- 1 scallion thinly sliced
- 1 tablespoon cilantro chopped
- 1 tablespoon mayonnaise
- 1 teaspoon dijon mustard
- ¼ teaspoon everything bagel seasoning
- salt and pepper to taste
Instructions
- Combine mayonnaise and dijon mustard in a small bowl.
- Add chopped scallion and chopped cilantro to the mayonnaise/mustard mixture.
- Add boiled and chopped eggs. Taste and add salt and pepper as needed.
- Sprinkle everything bagel seasoning over egg salad and serve on a toasted croissant or bagel!
