    Ricotta Fruit Toast

    Have you tried ricotta fruit toast yet? Its such a great change up to your usual breakfast line up! I know I get tried of smoothies, oatmeal, and eggs. (And some days I even get tired of avocado toasts!) 

    Ricotta toast is so easy to make and so versatile! I like to jazz up the ricotta a little bit to give it a nice boost of flavor. Very simple flavor but really makes a difference. Just add some ground cinnamon, sugar and vanilla extract to the ricotta cheese. Once you have the ricotta flavored up, you just need to toast your bread and get your toppings ready.

    Ricotta Fruit Toast

    This is actually very fun to play around with. Try different combinations of fruits, nuts, syrups and spreads!

    It can be a really great after school snacks for kids or after work pick up for the adults! My son Jaiden couldn't keep his hands off! He especially loved adding (and eating) the chocolate chips to the toast! And its a fun way to get him to eat his fruits! 

    Ricotta Fruit Toast

    As you can tell these are very summery fruit toppings. I choose the toppings according to what is in season right now, Blackberries, peaches, mango are actually in season right now! But I know this can work great with jams and different spreads or canned fruits as well! So you can play around with it for any season of the year. Its super versatile!  

    Not only can you play around with the fruit toppings but also the garnishes! I added chopped nuts and honey/nutella drizzles! Plus some chocolate chips, well as many as I could add to the toasts before Jaiden asked to "help" (it was more like "helped" himself to as many chocolate chips he could get his little hands on!)

    • Blackberry Peach (with an elderflower syrup drizzle and an almond crunch!)
    • Mango Mint (with a honey drizzle and a pistachio crunch!)
    • Nutella Banana (with a peanut and chocolate chip crunch!)

    Ingredients
      

    Ricotta Spread

    • 1 cup Ricotta Cheese
    • 1 tablespoon sugar
    • ½ teaspoon vanilla extract
    • ⅛ teaspoon ground cinnamon
    • pinch of salt

    Topping

    • sliced fruits of your choice
    • honey, chocolate chips, spreads, chopped nuts all optional

    Base

    • 6 slices of bread of your choice

    Instructions
     

    Prep for the Ricotta Toasts

    • In a small bowl, combine all of the ingredients for the Ricotta spread. Stir until well combined. Set aside while you prep the other ingredients
    • Prepare (peel and slice) the fruits you are using.
    • Toast the bread you are using.
    • Follow the steps below for the ricotta fruit toast you are creating!

    Blackberry Peach Ricotta Toast

    • Spread a tablespoon or 2 of the ricotta spread on the toast
    • Arrange the sliced peaches and blackberries over the ricotta spread
    • Drizzle with elderflower syrup and garnish with chopped almonds!

    Mango Mint Ricotta Toast

    • Spread a tablespoon or 2 of the ricotta spread on the toast
    • Top with cubes of mango
    • Drizzle honey over the mango and garnish with chopped mint and chopped pistachios

    Nutella Banana Ricotta Toast

    • Spread a tablespoon or 2 of the ricotta spread on the toast
    • Arrange sliced banana over ricotta spread
    • Drizzle Nutella over banana slices and garnish with chocolate chips and chopped peanuts.
