Her recipe for Buttermilk Pancakes is so....everything, that we literally cannot bring ourselves to use our boxed pancake mixes anymore! (Any one got any ideas for boxed pancake mix other than pancakes???)
It definitely takes a little more time to make pancakes from scratch, but not by much and most importantly the results are soo night and day that it is definitely worth the additional time and effort! I mean if you're going to have such an indulgent carb-ful breakfast, don't you agree that it needs to be absolutely amazing??
I think you can tell that I'm in love with these pancake recipe! But of course I'm have already put my own spin on this already perfect breakfast recipe by adding in a maple chai apple topping! It's seriously like apple pie for breakfast but a completely (ok maybe only slightly) legit version! Who needs dessert when you are eating this for breakfast!?!
Maple Chai Apple Topping (or a quick and lazy apple pie filling for your breakfast needs)
Just gather up the ingredients: diced apple, maple syrup, chai spice, brown sugar, butter, vanilla extract.
Add the butter and apples to a small saucepan. As the butter melts, add in the remaining ingredients, mix it. Let it cook for a few minutes and get ready to top your homemade buttermilk pancakes for the most amazing breakfast dish!

Maple Apple Chai Topped Buttermilk Pancakes
Ingredients
- 1 tablespoon butter
- 1 apple peeled and diced
- 1 tablespoon brown sugar
- ⅛ teaspoon chai spice (sub with ground cinnamon if not available)
- 2 tablespoon maple syrup
- 1 teaspoon vanilla extract
Instructions
- Heat a small saucepan to medium heat. Add butter and diced apples.
- As the butter starts to melt, add the remaining ingredients and stir.
- Let this mixture cook for about 5 minutes, stirring occasionally. Remove from heat and allow to cool before serving!
- Serve over buttermilk pancakes!
