This mango lassi parfait is the perfect addition to your brunch menu especially if you are looking for an Indian themed brunch!!
You get the delicious flavors of a mango lassi as a yogurt instead of a drink. I used the same exact ingredients to make a mango lassi only skipped out any additional liquid. So the texture is slightly different. The mango lassi is a thick, spoonable yogurt instead of drinkable smoothie.

The parfait adds to the fun and gives you great texture! Choose whatever toppings you wish! I liked the pairing of mixed berries with the creamy mango lassi yogurt. Blueberries, strawberries, and raspberries. Perfectly sweet and tart (and so colorful). I also layered it with granola for that additional crunch. The berries and granola just add that texture, freshness and yum! that can sometimes feel missing from a mango lassi by itself.

Get the kids involved!
Mango lassi parfait is an ideal recipe for kids. My kids had so much fun with this. Mango lassi is definitely their #1 go-to order whenever we go to an Indian restaurant. They just love the mango flavors and we don't feel super guilty because its filled with fruit, yogurt and milk.
My kids also loved to make their own parfaits. Once the mango lassi yogurt is ready, they could top their own individual parfaits however they liked. Without as much or as little fruit and granola as they wanted. They love fruit, so they added a ton of berries to theirs! It's like combining their two favorite snacks into one! Special treat for them, but really its just fruit and yogurt!!
More control for the adults!
Making at this home, we can completely erase our guilt because we know 100% what is going into the mango lassi. I used greek yogurt to keep the consistency of the yogurt thick even after the addition of the mango. Frozen mango chunks work best here. Not only are they prepped for you, but the frozen fruit helps to get a thicker consistency. Fresh mangoes, while equally delicious, will water down the yogurt.
By making this at home, you also get to control the amount of sugar you add. Actually you don't have to add in any sugar if you feel like the mangos are sweet enough.
This mango lassi parfait is super delicious, guilt-free and easy to whip up!
