Healthy Coconut and Mixed Nuts Energy Bites or Energy Ladoos

These coco-nutty energy ladoos are the perfect sweet treat for any on-the-go lifestyle. I replaced all of the sugar and ghee and fried elements from regular ladoo and used only healthy, sugar free ingredients! These energy ladoos are made from coconut, mixed nuts and dates!
One of my mom's go-to sweets recipes is peanut na ladoo (or ladoo made from peanuts). She's makes them for special occasions, holidays, before fasting occasions or if my dad requests them lol! And of course, she always sends a box our way whenever she makes them! And I mean, we love them; they're delicous! But they are also so full of sugar and ghee, which is not something we need to be indulging in all the time.
So I played around with the recipe to make them healthier and realized the changes make them similar to an energy bar or bite. I replaced the sugar and ghee for pitted dates! You get the same sticky sweetness but from a healthy, sugar free fruit! Dates are a great multifunction ingredient in these ladoos. They're a sweetener and binding agent. But they still have that coconut ladoo flavor from the cardamom and coconut. So no one is missing anything from the replacements!

Simple, all natural, sugar-free Ingredients!
- Dates - for that sweetness and stickiness to hold everything together
- Mixed Nuts - Cashews, almonds, pistachios. Feel free to use any mixed nuts you prefer!
- Shredded Coconut - for a more tropical, sweet chew
- Vanilla Extract - helps bring out additional sweetness
- Cardamom powder - for a more authentic ladoo flavor!
- Salt - to help bring out all of the flavors



Easy & Quick Prep!
Blend all of the ingredients in a food processor and squeeze the mixture into bite balls. You won't need any additional binder because the date provides enough stickiness.
I like to coat these energy laddoos with shredded coconut or ground pistachios (do see that color?) but you can leave them as is or even get more creative. Cocoa powder or mini chocolate chips would be great too.

Great for On-the-Go Energy!
These coco-nutty energy ladoos are a great snack for the lunchbox, before a workout or even anytime you're looking for an on-the-go snack! I like to pack them in a travel container for day trips and road trips! So much better than a sugar filled granola bar! Plus the size is perfect for a quick bite of energy!

Coco-Nutty Energy Ladoos
Ingredients
Coco-Nutty Energy Ladoo
- 1 cup cashews
- ½ cup almonds
- ¼ cup pistachios
- 4 dates pitted
- ¼ cup shredded coconut sweetened or unsweetened
- 1 teaspoon vanilla extract
- ¼ teaspoon cardamom powder
- ¼ teaspoon salt
Coating
- ¼ cup shredded coconut sweetened or unsweetened
- ¼ cup pistachios finely ground
Instructions
- In a food processor, pulse cashews, almonds, and pistachios until ground.
- Add remaining ladoo ingredients to the food processor and grind for about 4-6 minutes until mixture is coarsely ground. You can also test to see if it easily stays in a ball when squeezed together.
- Pour mixture out into a small bowl. Take 1½ tablespoons (or medium cookie scoop) of mixture and squeeze into a ball. Repeat this step for all of the mixture.
- If coating the ladoos, roll them around in the shredded coconut or ground pistachios.
- Store in an airtight container in the refrigerator.
