These cinnamon toast crunch apple muffins are full of apple and cinnamon flavors. Chunks of apples, apple cider, cinnamon cereal and spices makes them sweet and fruity. The cinnamon, cardamom, ginger, nutmeg pair perfectly with the apples. Making these the perfect treat to pair with coffee, tea or a cup of hot apple cider!

These muffins are like my childhood breakfast in a one! I cannot even tell you how many boxes of Cinnamon Toast Crunch I went through as a kid! Clearly a lot, if I'm now topping baked goods with them too!

What Ingredients do I need for Cinnamon Toast Crunch Apple Muffins?
- All Purpose Flour - for the base of this apple cider muffin batter
- Sugar - granulated sugar for this recipe
- Egg - brought to room temperature
- Baking Powder & Salt - to get the rise on these muffins
- Oil - any cooking oil you prefer, canola oil, vegetable oil, etc.
- Milk - your preference on the milk or non-dairy alternative
- Apple Cider - apple juice can also be substituted
- Apples - any variety, peeled and finely chopped. You want to get little bites of apple in every muffin but not have the apples turn into mush from the bake.
- Spices - I used cinnamon, cardamom, nutmeg and ginger. You can use any combination or even just substitute it for apple pie spice

How to top these Apple Cider Muffins?
What goes better than cinnamon with apples? Well nothing! So how about we just amp up that cinnamon flavor with Cinnamon Toast Crunch cereal! The cereal adds the perfect sugary cinnamon flavor plus a ton of crunchy texture. I just grind up some cereal in the food processor to get coarse crumbs.
To get the cereal crumbs to stick to the apple muffins I whipped up a quick cream cheese frosting. The creamy frosting is tangy and just slightly sweet and acts as the perfect glue for cereal.

Cinnamon Toast Crunch Apple Muffins
Ingredients
Apple Cider Muffins
- 1 cups all-purpose flour
- ½ cup granulated sugar
- 1 teaspoons baking powder
- ½ teaspoon salt
- ½ teaspoon cinnamon
- ¼ teaspoon cardamom
- ¼ teaspoon nutmeg
- ⅛ teaspoon ground ginger
- 1 large egg room temperature, beaten
- 1 tablespoon vegetable oil
- 1 apples peeled and finely chopped
- ¼ cup apple cider, or apple juice
- ⅛ cup milk, room temperature
Topping
- 4 ounces cream cheese
- powdered sugar
- vanilla extract
- 2 cups Cinnamon Toast Crunch cereal
Instructions
- Preheat oven to 350°F. Line a standard 12-cup muffin tin with 6 liners.
- In a large mixing bowl, combine flour, sugar, baking powder, salt, and spices. Add in chopped apples.
- In a separate bowl, whisk together beaten eggs, oil, apple cider, and milk.
- Pour the wet mixture into the flour mixture and stir just until very few lumps remain. (The batter will be a bit runny.)
- Fill the prepared muffin tin about ⅔ full of batter per cup. Bake for 20-22 minutes, or until a toothpick inserted in the center comes out mostly clean. Remove from the oven and let rest in pan for 5 minutes before transferring to a cooling rack.
- Combine the cream cheese, powdered sugar, vanilla extract in a small bowl, whisk until smooth.
- Dip the apple muffins into the cream cheese frosting and then top with the crushed Cinnamon Toast Crunch.
