
A delicious, easy to make ice cream with all of the flavors you'd expect from your favorite chai and biscuits! If you're in love with chai and biscuits as much as I am, then this ice cream is definitely for you! Not only is the perfect bite of chai and biscuits in ice cream form, there's also no ice cream machine required! It's a super quick recipe! It's so easy to prep early in the day, freeze and enjoy in the evening.
Indian Family Traditions and Chai
Mornings in most Indian households start with the warm and spicy aroma of masala chai. Whether its a busy and chaotic morning rush and the chai is enjoyed in a to-go container or a calm sit down with a plate of savory and sweet snacks to accompany the chai, the freshly brewed black tea with milk, sugar and warming spices, is how we start each day. Indulgent and at the same time energizing.
But its not just mornings! Oh no, chai is enjoyed multiple times throughout the day. Especially when entertaining guests. That is the Indian standard, to serve a hot cup of chai with at minimum a small snack to all guests that come over. And I don't know exactly what it is about that fresh cup of tea but it instantly opens up conversations, makes even less known acquaintances into long last family.
Some days, that spicy chai is served with a freshly prepared (fried) indulgences like samosas and pakoras, but almost always, there's a sweet tea biscuit. Preferably buttery and crumbly so that when its dunked into the chai (dunk-ability is a requirement obviously) it is able to soak up the delicious chai without losing too much of its foundation. Is there a more perfect bite?
Turning this traditional flavor into ice cream
And that chai-soaked bite of sweet tea biscuit is exactly that flavor of this ice cream!
Start with a no-churn vanilla ice cream base. Just 4 simple ingredients
- Heavy whipping cream
- Sweetened condensed milk
- Vanilla Extract
- A pinch of salt
Add the chai flavor though half & half steeped in black tea and cardamom. Feel free to add chai masala or adjust your tea strength here. But remember to cool the half & half before adding to the whipped cream and not add any additional sweetener!
Then add in your favorite tea biscuit crumbs! I love Lotus Biscoff in this ice cream! It's the perfect spice and texture to pair with a strong black tea. Parle-G is of course the classic chai biscuit pairing. In a pinch, I would recommend graham crackers, preferably the honey or cinnamon flavors.
All you really need to do, is whip the heavy cream into whipped cream and then you can incorporate all the other ingredients and whip it all together to fully incorporated. Gently fold in the crushed biscuit crumbs. Pour the ice cream mixture into a freeze-able container and freeze for at least 5 hours.

📖 Recipe
Chai and Biscuits Ice Cream (No-Churn Recipe)
Ingredients
- 1 14 oz can sweetened condensed milk
- 2 cups heavy whipping cream
- 2 teaspoons vanilla extract
- ½ cup half & half
- 1 tablespoon black tea loose leaf
- ¼ teaspoon cardamom powder
- pinch salt
- 10 tea biscuits or graham crackers
Instructions
- Heat half & half, loose leaf tea and cardamom in a small saucepan. Simmer for 3-4 minutes, stirring frequently. Remove from heat, strain the tea from the half & half and set aside the half and half to cool completely.
- Crush the tea biscuits into crumbs and set aside.
- Whip the heavy whipping cream with a mixer on medium-high speed until firm peaks form, about 2 minutes. Add vanilla extract and salt and whip again for about 20 seconds to incorporate.
- Add the condensed milk and tea-steeped half & half. Beat with the electric mixer for another 1 to 2 minutes until combined. Use a rubber spatula to fold in the tea biscuit crumbs stirring until combined.
- Pour into a 9-by-5-by-3-inch loaf pan, or any 6 cup freeze-able container and freeze for about 5 hours.
- Serve with additional cookie crumbs if desired!
